• 1st Course: Sweet Corn Soup – Bay scallops, smoked pork belly, pimento, micro leek, scallion oil. Pairing: Waltz Fusion

• 2nd Course: Grilled Peach Salad – Almond fried goat cheese, blueberry balsamic, blackberry honey, extra virgin olive oil, pickled red onions, farmers lettuces. Pairing: Waltz Stiegel Rosé

• 3rd Course: Lobster Bucatini – Brown butter poached lobster, paddlefish caviar, marinated heirlooms, summer herb pesto. Pairing: Waltz Reserve Chardonnay

• 4th Course: Red Wine Braised Short Rib – Garlic scape & preserved lemon gremolata, saffron & sweet pea arancini. Pairing: Waltz Crow Woods Cabernet Sauvignon
